One Bite Omakase Introduce
In the bustling culinary scene of New York City, the term "omakase" often conjures images of exclusive, high-priced, and perhaps intimidating dining experiences. One Bite Omakase on the Upper West Side challenges this notion, offering a refined, authentic, and surprisingly accessible take on this revered Japanese tradition. The name itself, "One Bite," speaks to the meticulous craftsmanship of each piece of sushi, perfectly prepared to be savored in a single, exquisite bite. This discreet treasure is a testament to the idea that a truly exceptional meal is not about ostentation but about the quality of the ingredients, the skill of the chef, and the personal connection fostered between the two. For discerning New Yorkers and visitors who appreciate a world-class sushi experience without the exorbitant cost, One Bite Omakase is a must-visit gem.

The most compelling reason to choose One Bite Omakase is the experience itself. As a true omakase restaurant, you are placing your trust in the chef, and the reviews make it clear that this trust is well-placed. The omakase dinner experience, which includes 13 courses for a set price, is a highlight. The menu changes regularly to ensure the use of the freshest ingredients, but it often includes exquisite items like King Salmon, Gindara, Akami Zuke, and the luxurious A5 Wagyu with Hokkaido Uni. One reviewer described it as "the most affordable and best omakase experience I've had outside of Tokyo," which is high praise for a New York establishment.
The meticulous preparation of each "one bite" is what truly sets this place apart. The chefs add "condiment touches" like yuzu, truffle, and uni, turning each piece of sushi into a small work of art. The final donburi, a signature dish featuring smoked wagyu, uni, and Ikura, is a memorable conclusion to the meal.
Beyond the food, the beverage selection is also worth noting. The restaurant offers a variety of beers, including Japanese brands like Hitachino and Sapporo. More impressively, their sake list is carefully curated, featuring premium selections like Hakkaisan 45 and Nanbubijin Shinpaku. As one customer noted, the Hakkaisan 45 Junmai Daiginjo sake was a "bargain" and paired perfectly with the meal.
The atmosphere is another reason to choose One Bite Omakase. Described as "cozy" and "trendy," the small, intimate setting at the sushi bar creates a personal and engaging dining experience. The chefs are an integral part of this, as they are the "real deal" and the experience feels like a performance. The attentiveness of the service, from the chefs to the waiter, ensures that the meal is not only delicious but also a comfortable and educational experience. For a special occasion or simply a desire for a high-quality meal, the combination of fresh, flavorful food, expert preparation, and an intimate setting makes One Bite Omakase a standout choice in the Upper West Side and a true gem for any New Yorker who appreciates the art of Japanese cuisine.

★ 5★ 4★ 3★ 2★ 1One Bite Omakase is easy to miss walking by on Amsterdam near W 80th, it is a small shop front with just one long omakase counter - perhaps 14 to 16 seats total. This discreet treasure is not to be missed. The most affordable and best omakase experience I’ve had outside of Tokyo - where I lived for three years and travel to visit each year. The fish is fresh, superb and prepared with great skill and attention for each ‘bite’. The omakase dinner experience includes 13 courses for $89. Compare this to other omakase restaurants in NY! Condiment touches included yuzu, truffle, toro caviar, uni, and many more carefully planned and executed subtle preparations for the fish. The final donburi was a signature dish - delicious smoked wagu, uni, and Ikura. We loved the Hakkaisan 45 Junmai Daiginjo sake, a bargain at $27 for a small carafe. One Bite Omakase is an Upper West Side gem experience is not to be missed.
July 08 · Lynn BGood special occasion meal experience. The whole restaurant is about 11 chairs at the sushi bar. It's Omakase - so the sushi chef decides what to serve you - you don't pick. It is a fixed price and you can ask for additional pieces. They're billed separately. The sushi tastes fresh and is a gastronomic delight. Service is attentive and the sushi chefs make it a performance. They're the real deal - and difficult to understand. Pro tip: you can ask the waiter questions. I'll be back!
January 13 · Al CohenMan this place is amazing, from the friendly staff, the delicious food where some of the sushi was like butter. We were lucky enough to meet some friendly folks and we were able to have fun conversations with them and the chefs. I love this place! I can’t wait to go back!
March 01 · Abraham ChongVery nice, cozy and fancy at the same time, food was amazing good, great service. The last thing in the menu was unagi donburi, they didn’t have unagi so they gave us wagyu, I wish they told us before. Was looking forward for unagi.
July 30 · Rosmali BRice is the cornerstone of great sushi, and here it’s perfectly seasoned, enhancing every bite. The staff is exceptional—taking the time to explain each dish and answer any questions about the high-quality ingredients. Their attention to detail truly elevates the experience. I’m already looking forward to my next visit!
