This blend of mature ciders has been blended and age to form a complex yet approachable phenolic blanket of intense fruitiness and zingy mild tannins. 6.8%ABV

A fermented farmhouse blend of apples from Samascott Orchards. It is an off dry sparkling cider with a crisp, bold, and refreshing taste. 6.7% ABV.

Ginger Mule is crafted with 100% New York apples from Samascott Orchards in Kinderhook, NY. It is infused with ginger and lime to create a spicy cider reminiscent of the classic cocktail. 6.7%ABV

Wolf at the Door is a raw and acidic, bone-dry cider, made from wild-fermented tannic apples. ABV: 6.0%

Crisp and Crushable, a light and refreshing experience! We use a blend of mostly acidic apples including Baya Marisa (red fleshed apple) to make a refreshing rose with a beautiful natural pink hue. Its low tannins give it a light yet sharp palate that is at home in everything from stemware to solo cups. Perky and clever: the one who has a sweet face backed by really sharp wit. Pairs well with: savory tarts and soft, creamy cheeses, basking in the glow of those string lights you finally hung on your patio, channeling your inner Julia Child and failing miserably ABV: 6.0%

Tepache - Mango Pineapple Chili Cider Juicy & bright, tropically sweet, barely perceptible heat, balance.

Doc’s Pear Cider is a traditional cider handcrafted from a select blend of apples and pears. Intense aromas of ripened pear dance from the glass. The taste is light and crisp with a clean, dry finish. (5.5% alcohol)

Austin Eastciders Imperial Watermelon is a refreshed version of the classic fan favorite. Packing a punch at 8.3% ABV and the perfect companion for being on the water, Imperial Watermelon is sure to be the new drink of the season!

Inspired by Czech tradition, our Pilsner is light in color and body with a clean, bitter finish. Czech Saaz hops impart soft floral and grassy aromas. This style is deceptively difficult to brew, and we’ve worked hard to perfect our take on this unassuming lager. 5% abv

German style Pilsner. 5.7% ABV

Cucumber pilsner 4.8% abv

Ma is a Japanese concept that values space and time, the void. The delicacy of a Pilsner represents this breath that prepares for the aromatic characteristics of a complex dry hopping in this recipe. Cascade hops, with their citrus and floral notes, represent the tradition of classic IPAs, while HBC 1019 brings a new aromatic perspective, adding an unusual blend of citrus fruits, mango, peach, and melon. It’s an invitation to savor the moment. 4.8%ABV

One of the highlights of Japanese cuisine is the tea. And one of the most delicate and flavorful Asian teas is made using the jasmine petals, called Matsurika in Japan. We added these petals to the recipe of a Pilsen, a soft and delicate beer, bringing floral notes to the aroma and palate. 5% ABV

Named for the delicate engravings popularized by 19th century seafarers, Scrimshaw is a fresh tasting Pilsner brewed in the finest European tradition using Munich malt and, Hallertauer and Tettnang hops. Scrimshaw has a subtle hop character, a crisp, clean palate, and a dry finish. 4.5% ABV

Mörena is brewed with a blend of German Pilsner malts and flaked wheat and goes through our intensive step mash regimen to maximize flavor, fermentability, and head retention. In the kettle, we added German Perle, German Saaz, and a whirlpool addition of Motueka. Post fermentation, we added a modest dry hop addition of Nelson Sauvin and Riwaka. Morena means "Good Morning!" in Mãori and this beer is dedicated to the hard working folks at Freestyle Hops. 5.2%ABV

A crisp pilsner beer featuring all Czech ingredients. Smooth and snappy on the palate, big and bitey on the finish. Brewed with Pilsner and Vienna malt, this lager has the light body and crisp, cracker-y malt profile that you know and love. It pours a beautiful, bright golden hue and is clean, and thirst quenching on the palate. 5.4%ABV

Collaboration with Alternate Ending Beer Co. What happens when two process brewers get together to make the simplest beer style. This. Step mash Infusions, decocted for body but absolutely bone dry. Tettnang Hallertaeur Tradition throughout. Bitter orange peel, well bodied malt. 5.2%ABV

Pilsner made with 100% NYS grain and hops. Fermented slow and cool with our house lager yeast in stainless steel for 4 weeks. This beer is a reflection of the small farms we support and the time we spend getting to know our ingredients. 5.2%ABV

Pale Lager classically hopped with Hallertau Mittelfrüh, there is subtle hop bitterness to compliment a crisp and subtle sweet malt on the front end of this beer. Notes of pithy orange peel, a bit floral and pine and fluffy bread. ABV: 6.0%

Watclhar is a fusion of old and new world lagers to arrive at a place of timeless quality at the frontier of contemporary lager. Crisp, zesty, and delicately balanced with deep citric and faint botanical elements that deliver complex layers of refreshment. An original, yet pure, expressive lager for a new age! 5.1% ABV

Unfiltered Helles-style lager brewed with pilsner malt, Noble hops, and German yeast; naturally carbonated, and cold conditioned for 8 weeks. The intention of this beer is to serve as a reminder to be present. An ever-connected world numbs our connection to the here and now, leaving us hung up on the past, or worried about the future. As you enjoy this beer, we encourage you to take a moment to pause, ground down, and imbibe in the world around you…and as you, remind yourself to just “be”. 4.8%ABV

Mercury is rising and we have just the beer to pair with all your fishing and skinny dipping adventures. Naked & Fishing is a medium bodied lager brewed with German and American aroma hops for a pleasant bouquet of citrus peel and bready malt and a wonderful smooth crisp finish. Perfect for any outdoor activity! ABV: 4.4%

Crispy American Lager 5.2%ABV

Continuing our exploration into the world’s many styles of lagers, this is our first ever Mexican Style lager in cans. The malt bill for this beer consisted of German pils, Vienna malts, local flaked corn, and a touch of chocolate malt to add a roasty quality to this beer. In the boil, we used German Magnum and Hallertau Mittelfruh hops, and finally fermented it with a Mexican lager yeast. A clean, dark chocolatey aroma can be found up front, followed by toasty malt flavors fading into a German hop bitterness on the finish. 5.4% ABV.

Light Lager style beer brewed by Compañía Cervecera de Puerto Rico 4.2% ABV

This 5.5% rice lager carries subtle notes of baked lychee and baked pineapple on the palate alongside the aromatics of lightly toasted jasmine rice within a light, effervescent body reminiscent of vintage champagne. 5.5% abv

Nite Lite is a craft light lager. The beer pours sunny gold with a soft, white head, aromas of fresh bread on the nose. It sips crisp and refreshing, with hints of biscuit and citrus. German hops give it a zesty finish, inviting another sip. 4.3% ABV

As with the classic Munich Helles, Salem Lager delivers on all the things that make helles unique. Aromas of bread, grape and honey, with a full bodied maltiness in a modest ABV beer. 4.5% ABV

Blonde lager with lemonade and lavender 4.5%ABV

Our adjunct lager brewed with local flaked corn and 100% NY ingredients. Intended to be light, refreshing and sessionable, Cicada is a classic American lager style that exhibits simplicity and avoids complicating our mission to celebrate the flavors of our local harvest. Hopped with Mt. Hood and Sterling. 4.5%ABV

Our Oktoberfest is a perennial favorite around these parts, celebrating the enduring ritual of gathering with family, friends & strangers to slug malty, rich, ruby-colored lager. An Oktoberfest that lives in the malty bosom of Munich’s storied tradition. Take a drive through Lager Town.

Cans and Bottles - Kolsch

Medium in body with a soft mouthfeel and a straw yellow or pale gold color, Kölsch has a spicy, herbal Noble hop bitterness that is medium to slightly assertive—less than a Pilsner, but not by much. A somewhat fruity or vinous (grape-y from malts) quality and a crisp, dryish finish make up the rest of the flavor profile. ABV: 4.5%

The tectonic plates have shifted, letting forth an eruption of gushing blackberries and blueberries. Each burst filled with milk sugar & vanilla for creamsicle smoothness. A freshly canned sour ale with explosively delicious flavor. 6%ABV

This cherry berry fruited sour is here to stay... proof that dreams do come true. Bright cherries, tart raspberries and sweet blueberries balance out the assertive sour nature of this beer. It pours a rosy red, with a light spritzy body and subtle bitterness. Brewed with the sour gurus of Belgium, Liefmans. Malt Pilsner and Crystal Malt. 6.5% ABV.

Golden Sour with Palisade Peaches Aged in a Colorado Single Malt barrel. 8.5% ABV

BA Flanders Red with Scottish Blueberries. Inspired by Flanders Reds of old, Blood Goat is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged 4 months, with around 20% ‘mature’ stock beer aged in neutral wine casks for around one year. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was transferred onto 200g/l of spent blueberries and lees from a previous batch of Cerulean, in addition to 100g/l of fresh blueberries which further intensify the berry characteristics in this beer. 6.66% ABV

Just when you thought you had done slurped up all the neon, well, you done thought wrong. Rosé Gosé is hot pink in appearance with a tart berry flavor. Brewed with Himalayan Pink Sea Salt, Coriander, Hibiscus, then soured with Lactobacillus and fermented with Saison yeast. Slicker than your rich, French uncle sippin pink vino on the deck of a yacht off the coast of St. Tropez. Anchors down, pinkies up! 4.2%ABV

We’re pleased to announce the release of our Oak Barrel Aged Flanders Red Ale! This beer showcases our blend of a young Flanders Red aged for 24 months in American Oak barrels, resulting in a beer which greets the drinker with aromatics of sangiovese grapes and American Oak alongside flavors of tart cherry and rhubarb. 6.7% abv

Our 4th Anniversary release. A three-year blend of spontaneous and deliberately fermented sour ales aged in white and red wine barrels. Approachably sour with notes of hay, earthy funk, and oak, with subtle hints of pineapple, blackberry, and Chardonnay. Medium-light body with a tangy mouthfeel and a dry, clean finish. Bottle-conditioned for 22 months.

With the typical acidity of the style, light and refreshing, Sawā is the translation of sour in Japanese. In this version of Sawā we chose to add a generous amount of peach. Grown in Brazil and Japan, the fruit has a striking, light acidity sweetness and unmistakable flavor, being a perfect addition to our recipe. ABV: 4.7%

Mixed Fermentation Gose Style sour ale brewed with coriander, pink Himalayan sea salt and butterfly pea flower from Thailand. This beer pours indigo/purple with notes of sour and sweet grape jolly rancher. Slightly salty, acidic and completely refreshing. Dry hopped with Mosaic hops.

This sour hung out in our kettle for 48 hours and fermented with Strawberry and Mango purees. A final aging on Freeze Dried Strawberries brings notes of a sweet berry nose to this succulent and very smash-able sour!

Coolship Cerise is aged on cherries for six months in oak wine barrels. We use 100 lbs of fresh Maine cherries (a blend of Montmorency and Balaton varieties) per oak barrel. The beer is pale red in color with cherry and spice in the aroma. Cherry, oak and spice punctuate the flavor. A dry finish rounds out this tart and delightfully complex beer. 6%ABV

Holiday spiced beer with sweet orange peel, nutmeg & cinnamon. 9% abv

Neon City is a versatile pale ale suitable for all day and all season drinking. Accents of Mandarin Peel and Bergamot reflects our home city. Hong Kong's dual Chinese and English heritage. These bright citrusy notes layered on an elegantly balanced pale ale pairs perfectly with a wide range of Asian flavors. 5.2% abv

Initially, the Brut de Bière wraps itself in a silky blonde dress with white foam lace. The nose is caressed by a fruity-spicy Riesling bouquet, the tongue is surprised by intertwining delicate sweetness and utterly charming acidity. Finely bubbly carbonic acid is reminiscent of the mousseux typical of sparkling wine. The rich complexity and beautiful dryness impress with great elegance. 8% abv

A light-bodied ale brewed with raspberry jam, offering a well-balanced blend of sweetness and fruitiness. Smooth and refreshing, this beer highlights the natural flavors of raspberries. ABV: 9.1%

Amber ale with orange peel, grains of paradise and coriander Our take on the smooth, easy drinking ambers poured in cafés across Belgium, Rare Vos (Strange Fox) takes its name from a tavern near Brussels known for cycling contests, pigeon races and outstanding ales. Pouring a brilliant copper with a creamy white head, this bright, beguiling beer is sensational to session, and pairs wonderfully with mussels, frites and other pub fare. 6.5% ABV

This style bucked German purity laws in the 1500s & in the process became a legendary style still loved to this day. The OG hazy boi. Abv: 5.3%

Dive headfirst into a luscious blend of strawberry and pineapple in this bright, fresh Wheat Ale jam-packed with real fruit. 5.5%ABV

Major tropical fruit, citrus, and spice notes waft out of the glass in combination whose intensity hasn't been matched since the sax solo was pronounced dead in 1989. The use of oats & wheat make f oui r a pillowy mouthfeel followed up by a dry, refreshing finish. Jacuzzi Crushable! 6%ABV

As an ingredient of unmistakable flavor, ginger is used in Japanese cuisine, from dishes to teas and drinks. And that's the element that gives a special touch to our Witbier, a soft, refreshing and super tasty style that also has wheat and orange peels in the recipe. The name of this beer means "yummy" in Japanese, and we made it specially to combine with light dishes, causing the drinker to exclaim an "Oishii" at the end of each sip. 4.7% ABV

Kasteel Wit is a fresh wheat beer offering an aroma of citrus notes and freshly grated ginger. The taste is superbly balanced between the zesty citrus, spicy ginger and biscuity maltiness. The harmonious blend of sweet, sour and spicy flavors is topped with coriander and lemongrass for a crisp, dry and refreshing finish. 4.8%ABV

A refreshing mildly hopped witbier brewed with coriander, nutmeg, orange peel and fresh orange juice. 5.55%ABV

Our second blend of Meager Portmanteau is once again based on the union of Primitive's Colorado spontaneous beer rested on gorgeously ripe local white peaches with a select barrique of Cellar West's oak aged saison. This vintage of Meager Portmanteau includes the incorporation of “spent Wet Hops,” counterintuitively allowing once-used Multihead and Citra hops fresh from the bine to add a vibrant tropical quality to the assemblage. What results from this collaboration of inspiration, time, and technique is a delightfully balanced Colorado farmhouse beer representative of both breweries. 6.4%ABV

Brewed by a world renowned master beer brewer, Rupee's seasonal Mango Wheat Ale is smooth, bursting with fresh mango flavor & tropical aroma. 4% abv

Grapefruit Hefeweizer

My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish. 6.6% ABV

Birds & Bees is our 6.2% ABV modern interpretation of a Bière de Miel (a saison-style ale brewed with honey), inspired by one of our favorite beers of this style, with an addition of wildflower honey to the kettle, and dry hopped with Motueka from New Zealand. This beer is light, refreshing, and dry while possessing bright notes of flowers and lime. Lively, effervescent carbonation elevates the aromatics out of your glass and into your nose! A gentle mouthfeel invites the next sip. 6.2%ABV

Copper-tinted brown ale that combines generous hints of fruit, toast and sweet caramel. Abv: 7%

With its typical golden color, slightly hazy appearance and fine head, is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. It was first brewed by the monks of Chimay at Scourmont Abbey in 1966. Above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. 8% ABV

This is one of the oldest beers of Westmalle Abbey, with a tradition that dates back to the start of our brewery. It was created to drink with meals in the abbey, something the monks still do today. As a top fermented golden yellow Trappist beer, the Extra is unique in combining a low alcohol content (4.8%) with a rich flavour. Enjoy its fruity notes and its refreshing, thirst-quenching character. 4.8%ABV

Field Theory explores how different fields like gravitational, magnetic, or electric fields—interact with matter. It explains how forces act at a distance and where particles and waves can interact without direct contact. Field Theory West Coast Style IPA uses a precise west coast style water profile for a clean base with a newer yeast and a Citra Lupomax and Mosaic Lupomax hop bill to create a harmonious interaction in each sip. Field Theory offers pointed, crisp flavors of mandarin wedges, assorted tropical fruit, candied pineapple, and a touch of piney earth. It’s backed by a clean profile and semi-dry finish, offering dynamic flavors paired with an easy drinking experience in each sip. 6.2%ABV

NE IPA w/ Citra, Galaxy & Enigma 5.9% ABV

This precious hazy IPA weighs in at 6.5% ABV and showcases flavors and aromas of bright citrus and sweet tropical fruit. Idaho Gem hops are supported by Citra and Rakau to bring together a beautiful hoppy bouquet. ABV: 6.5%

Brewed to celebrate our friends at The Owl Farm. Pours bright copper-orange hue in the glass. Aggressively hopped with Nelson Sauvin, Cashmere, Chinook and Cascade. WARNING: excessive consumption of this beer may cause you to rebel against the mainstream and drink more West Coast IPAs. 7%ABV

Hopped to gargantuan proportions with our hand-selected El Dorado, Cashmere, Nelson Sauvin and Mosaic. Firm, prehistoric bitterness and a crisp, clean finish. Welcome to Jurassic Bark 7.2%ABV

Our “East Coast” version of a West Coast-style IPA. Intense hop flavors and aromas of tropical and citrus fruits and pine dominate. A subtle malt sweetness brings the beer into balance. 7%ABV

Forget Shark Week. Beach Creature is here for the summer. Possibly the most frightening thing to ever lurk around the seas. Its reign of terror stretches from Mavericks Beach to Coney Island. No shore is safe! This take on a classic West Coast IPA was brewed on a 2-Row base with a touch of a few specialty malts to give it a nice but mild malty backbone. Copious amounts of Cascade and Chinook were added hot side in multiple additions which present tons of citrus rind and grapefruit, Clean. Dry. Appropriately bitter. 7.7% ABV.

We flipped the script on Hawiian Pizza. 6.8% nope 8.6% Heavy on Mosaic with a hint of Simcoe? No. Heavy on both! This juiced up version of HP was outrageously hopped with Simcoe, Simcoe Cryo, Mosaic, Mosaic Hyperboostm, and Kohia Nelson, which is a blend of New Zealand grown, Nelson Sauvin, Rakau, and Passion Fruit. Yes. Actual passion fruit. 8.6% ABV.

Double dry-hopping with Citra and Mosaic hops creates this world-renowned IPA’s intense tropical fruit and citrus aromas. Brewed with Golden Promise malt, this beer finishes rich and dry. First brewed in collaboration with Amager Brewery in Denmark. 7.2%ABV

A tribute to one of the best things (ok, the best thing) you can pull from the Chesapeake Bay. We used some decidedly classic US grown hops, Citra, Mosaic and Simcoe, all hand selected for maximum incredibleness. 6.5%ABV

Smog Cutter is a new twist to a classic American IPA that we grew up loving. We double dry hopped this with Citra, Simcoe and Mosaic We then added added some new hop products (Mosaic Abstrax, Mosaic Quantum Simcoe Abstrax and Simcoe Quantum) to add updated innovation to the classic style. ABV: 7.8%

Double IPA made with 100% NY-grown ingredients. Two heavy-handed dry hop additions of NY Zeus, Mackinac and Paradigm hops saturate this pungent, hazy Double IPA. A supple base of flaked wheat with malted and flaked oats supports these ultra-fresh, expressive hops that we are very fortunate to be able to source from our hop growers upstate. 8.0%ABV

Released Nov. 2019. A Jedi prophecy foretells that the Chosen One from Florida will bring balance to beer by choking out punk ass gangsta rappers… but sometimes this path leads to the darkside. Fortunately, there is a thiicccc Life After Death Star. Featuring a long boil to create our thickest and most decadent base yet, we added shredded raw coconut, marshmallow, vanilla, and Ghost Bear Espresso Blend coffee from the newly crowned Microroaster of the year, Mostra Coffee, along with a touch of lactose. 11%ABV Life After Death Star pours a viscous jet black and develops a caramel head upon pouring releasing an olfactory onslaught of beautifully balanced notes of espresso coffee paired with flavors of big fudgy creamy marshmallow, just scrapped vanilla, brownie batter, and light coconut throughout. This beer is extremely smooth, luxurious, and creamy. You may actually try and chew it. No question this is the biggest and best stout to come out of Middletown yet.

Maduro is a Northern English-style brown ale with some American affectations. Maduro is higher in alcohol than the common English brown ale and features flaked oats in the malt bill which imparts a silky body and works to mesh the roasted, toasted and chocolate components together in Maduro’s complex malt profile. The end result is a remarkably full-flavored yet approachable and sessionable brown ale that pairs well with mild to medium cigars. 5.5%ABV

A few years ago we went to Tampa, Florida to brew a massive Imperial Stout together with our friends at Angry Chair Brewing. 2022 it was time again, but this time it was brewed in Sweden, here is the barrel aged version. 14.3% ABV

Oatmeal stout 6% abv

Tiny is a Belgian inspired Imperial Stout weighing in at 11.8% abv. You'll find big chocolate and roasted notes, balanced with the Belgian flavors from the Abbey yeast strain. This beer is very smooth and lacks the astringency you sometimes find in these big Imperial Stouts. 11.8% abv

Gingerbread Stout Aged in a Combination of A. Smith Bowman and Heaven Hill Bourbon Barrels. 12.2% ABV.

La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. In the world of German brewing, Krausen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or “green” beer. And Aufkrausen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager. Aecht Schlenkerla Krausen is an amber-colored, unfiltered lager beer with beautiful malt flavors and a slight smokiness. It matures for months in the deep rock cellars underneath the Schlenkerla brewery and is krausened with Aecht Schlenkerla Rauchbier just before kegging. Quaffable and with a pleasantly moderate level of alcohol, Aecht Schlenkerla Kräusen is an ideal refreshment for the warmer months.

This blend of mature ciders has been blended and age to form a complex yet approachable phenolic blanket of intense fruitiness and zingy mild tannins. 6.8%ABV

A fermented farmhouse blend of apples from Samascott Orchards. It is an off dry sparkling cider with a crisp, bold, and refreshing taste. 6.7% ABV.

Ginger Mule is crafted with 100% New York apples from Samascott Orchards in Kinderhook, NY. It is infused with ginger and lime to create a spicy cider reminiscent of the classic cocktail. 6.7%ABV

Wolf at the Door is a raw and acidic, bone-dry cider, made from wild-fermented tannic apples. ABV: 6.0%

Crisp and Crushable, a light and refreshing experience! We use a blend of mostly acidic apples including Baya Marisa (red fleshed apple) to make a refreshing rose with a beautiful natural pink hue. Its low tannins give it a light yet sharp palate that is at home in everything from stemware to solo cups. Perky and clever: the one who has a sweet face backed by really sharp wit. Pairs well with: savory tarts and soft, creamy cheeses, basking in the glow of those string lights you finally hung on your patio, channeling your inner Julia Child and failing miserably ABV: 6.0%

Tepache - Mango Pineapple Chili Cider Juicy & bright, tropically sweet, barely perceptible heat, balance.

Doc’s Pear Cider is a traditional cider handcrafted from a select blend of apples and pears. Intense aromas of ripened pear dance from the glass. The taste is light and crisp with a clean, dry finish. (5.5% alcohol)

Austin Eastciders Imperial Watermelon is a refreshed version of the classic fan favorite. Packing a punch at 8.3% ABV and the perfect companion for being on the water, Imperial Watermelon is sure to be the new drink of the season!

Inspired by Czech tradition, our Pilsner is light in color and body with a clean, bitter finish. Czech Saaz hops impart soft floral and grassy aromas. This style is deceptively difficult to brew, and we’ve worked hard to perfect our take on this unassuming lager. 5% abv

German style Pilsner. 5.7% ABV

Cucumber pilsner 4.8% abv

Ma is a Japanese concept that values space and time, the void. The delicacy of a Pilsner represents this breath that prepares for the aromatic characteristics of a complex dry hopping in this recipe. Cascade hops, with their citrus and floral notes, represent the tradition of classic IPAs, while HBC 1019 brings a new aromatic perspective, adding an unusual blend of citrus fruits, mango, peach, and melon. It’s an invitation to savor the moment. 4.8%ABV

One of the highlights of Japanese cuisine is the tea. And one of the most delicate and flavorful Asian teas is made using the jasmine petals, called Matsurika in Japan. We added these petals to the recipe of a Pilsen, a soft and delicate beer, bringing floral notes to the aroma and palate. 5% ABV

Named for the delicate engravings popularized by 19th century seafarers, Scrimshaw is a fresh tasting Pilsner brewed in the finest European tradition using Munich malt and, Hallertauer and Tettnang hops. Scrimshaw has a subtle hop character, a crisp, clean palate, and a dry finish. 4.5% ABV

Mörena is brewed with a blend of German Pilsner malts and flaked wheat and goes through our intensive step mash regimen to maximize flavor, fermentability, and head retention. In the kettle, we added German Perle, German Saaz, and a whirlpool addition of Motueka. Post fermentation, we added a modest dry hop addition of Nelson Sauvin and Riwaka. Morena means "Good Morning!" in Mãori and this beer is dedicated to the hard working folks at Freestyle Hops. 5.2%ABV

A crisp pilsner beer featuring all Czech ingredients. Smooth and snappy on the palate, big and bitey on the finish. Brewed with Pilsner and Vienna malt, this lager has the light body and crisp, cracker-y malt profile that you know and love. It pours a beautiful, bright golden hue and is clean, and thirst quenching on the palate. 5.4%ABV

Collaboration with Alternate Ending Beer Co. What happens when two process brewers get together to make the simplest beer style. This. Step mash Infusions, decocted for body but absolutely bone dry. Tettnang Hallertaeur Tradition throughout. Bitter orange peel, well bodied malt. 5.2%ABV

Pilsner made with 100% NYS grain and hops. Fermented slow and cool with our house lager yeast in stainless steel for 4 weeks. This beer is a reflection of the small farms we support and the time we spend getting to know our ingredients. 5.2%ABV

Lager

Pale Lager classically hopped with Hallertau Mittelfrüh, there is subtle hop bitterness to compliment a crisp and subtle sweet malt on the front end of this beer. Notes of pithy orange peel, a bit floral and pine and fluffy bread. ABV: 6.0%

Watclhar is a fusion of old and new world lagers to arrive at a place of timeless quality at the frontier of contemporary lager. Crisp, zesty, and delicately balanced with deep citric and faint botanical elements that deliver complex layers of refreshment. An original, yet pure, expressive lager for a new age! 5.1% ABV

Unfiltered Helles-style lager brewed with pilsner malt, Noble hops, and German yeast; naturally carbonated, and cold conditioned for 8 weeks. The intention of this beer is to serve as a reminder to be present. An ever-connected world numbs our connection to the here and now, leaving us hung up on the past, or worried about the future. As you enjoy this beer, we encourage you to take a moment to pause, ground down, and imbibe in the world around you…and as you, remind yourself to just “be”. 4.8%ABV

Mercury is rising and we have just the beer to pair with all your fishing and skinny dipping adventures. Naked & Fishing is a medium bodied lager brewed with German and American aroma hops for a pleasant bouquet of citrus peel and bready malt and a wonderful smooth crisp finish. Perfect for any outdoor activity! ABV: 4.4%

Crispy American Lager 5.2%ABV

Continuing our exploration into the world’s many styles of lagers, this is our first ever Mexican Style lager in cans. The malt bill for this beer consisted of German pils, Vienna malts, local flaked corn, and a touch of chocolate malt to add a roasty quality to this beer. In the boil, we used German Magnum and Hallertau Mittelfruh hops, and finally fermented it with a Mexican lager yeast. A clean, dark chocolatey aroma can be found up front, followed by toasty malt flavors fading into a German hop bitterness on the finish. 5.4% ABV.

Light Lager style beer brewed by Compañía Cervecera de Puerto Rico 4.2% ABV

This 5.5% rice lager carries subtle notes of baked lychee and baked pineapple on the palate alongside the aromatics of lightly toasted jasmine rice within a light, effervescent body reminiscent of vintage champagne. 5.5% abv

Nite Lite is a craft light lager. The beer pours sunny gold with a soft, white head, aromas of fresh bread on the nose. It sips crisp and refreshing, with hints of biscuit and citrus. German hops give it a zesty finish, inviting another sip. 4.3% ABV

As with the classic Munich Helles, Salem Lager delivers on all the things that make helles unique. Aromas of bread, grape and honey, with a full bodied maltiness in a modest ABV beer. 4.5% ABV

Blonde lager with lemonade and lavender 4.5%ABV

Our adjunct lager brewed with local flaked corn and 100% NY ingredients. Intended to be light, refreshing and sessionable, Cicada is a classic American lager style that exhibits simplicity and avoids complicating our mission to celebrate the flavors of our local harvest. Hopped with Mt. Hood and Sterling. 4.5%ABV

The tectonic plates have shifted, letting forth an eruption of gushing blackberries and blueberries. Each burst filled with milk sugar & vanilla for creamsicle smoothness. A freshly canned sour ale with explosively delicious flavor. 6%ABV

This cherry berry fruited sour is here to stay... proof that dreams do come true. Bright cherries, tart raspberries and sweet blueberries balance out the assertive sour nature of this beer. BA Flanders Red with Scottish Blueberries. Inspired by Flanders Reds of old, Blood Goat is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged 4 months, with around 20% ‘mature’ stock beer aged in neutral wine casks for around one year. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blend was transferred onto 200g/l of spent blueberries and lees from a previous batch of Cerulean, in addition to 100g/l of fresh blueberries which further intensify the berry characteristics in this beer. 6.66% ABV

Just when you thought you had done slurped up all the neon, well, you done thought wrong. Rosé Gosé is hot pink in appearance with a tart berry flavor. Brewed with Himalayan Pink Sea Salt, Coriander, Hibiscus, then soured with Lactobacillus and fermented with Saison yeast. Slicker than your rich, French uncle sippin pink vino on the deck of a yacht off the coast of St. Tropez. Anchors down, pinkies up! 4.2%ABV

With the typical acidity of the style, light and refreshing, Sawā is the translation of sour in Japanese. In this version of Sawā we chose to add a generous amount of peach. Mixed Fermentation Gose Style sour ale brewed with coriander, pink Himalayan sea salt and butterfly pea flower from Thailand. This beer pours indigo/purple with notes of sour and sweet grape jolly rancher. Slightly salty, acidic and completely refreshing. Dry hopped with Mosaic hops.

This sour hung out in our kettle for 48 hours and fermented with Strawberry and Mango purees. A final aging on Freeze Dried Strawberries brings notes of a sweet berry nose to this succulent and very smash-able sour!

Ales

Coolship Cerise is aged on cherries for six months in oak wine barrels. We use 100 lbs of fresh Maine cherries (a blend of Montmorency and Balaton varieties) per oak barrel. The beer is pale red in color with cherry and spice in the aroma. Cherry, oak and spice punctuate the flavor. A dry finish rounds out this tart and delightfully complex beer. 6%ABV

Holiday spiced beer with sweet orange peel, nutmeg & cinnamon. 9% abv

Neon City is a versatile pale ale suitable for all day and all season drinking. Accents of Mandarin Peel and Bergamot reflects our home city. Hong Kong's dual Chinese and English heritage. These bright citrusy notes layered on an elegantly balanced pale ale pairs perfectly with a wide range of Asian flavors. 5.2% abv

Initially, the Brut de Bière wraps itself in a silky blonde dress with white foam lace. The nose is caressed by a fruity-spicy Riesling bouquet, the tongue is surprised by intertwining delicate sweetness and utterly charming acidity. Finely bubbly carbonic acid is reminiscent of the mousseux typical of sparkling wine. The rich complexity and beautiful dryness impress with great elegance. 8% abv

A light-bodied ale brewed with raspberry jam, offering a well-balanced blend of sweetness and fruitiness. Smooth and refreshing, this beer highlights the natural flavors of raspberries. ABV: 9.1%

Amber Ale

Amber ale with orange peel, grains of paradise and coriander Our take on the smooth, easy drinking ambers poured in cafés across Belgium, Rare Vos (Strange Fox) takes its name from a tavern near Brussels known for cycling contests, pigeon races and outstanding ales. Pouring a brilliant copper with a creamy white head, this bright, beguiling beer is sensational to session, and pairs wonderfully with mussels, frites and other pub fare. 6.5% ABV

Major tropical fruit, citrus, and spice notes waft out of the glass in combination whose intensity hasn't been matched since the sax solo was pronounced dead in 1989. The use of oats & wheat make f oui r a pillowy mouthfeel followed up by a dry, refreshing finish. Jacuzzi Crushable! 6%ABV

As an ingredient of unmistakable flavor, ginger is used in Japanese cuisine, from dishes to teas and drinks. And that's the element that gives a special touch to our Witbier, a soft, refreshing and super tasty style that also has wheat and orange peels in the recipe. The name of this beer means "yummy" in Japanese, and we made it specially to combine with light dishes, causing the drinker to exclaim an "Oishii" at the end of each sip. 4.7% ABV

Kasteel Wit is a fresh wheat beer offering an aroma of citrus notes and freshly grated ginger. The taste is superbly balanced between the zesty citrus, spicy ginger and biscuity maltiness. The harmonious blend of sweet, sour and spicy flavors is topped with coriander and lemongrass for a crisp, dry and refreshing finish. 4.8%ABV

Our second blend of Meager Portmanteau is once again based on the union of Primitive's Colorado spontaneous beer rested on gorgeously ripe local white peaches with a select barrique of Cellar West's oak aged saison. This vintage of Meager Portmanteau includes the incorporation of “spent Wet Hops,” counterintuitively allowing once-used Multihead and Citra hops fresh from the bine to add a vibrant tropical quality to the assemblage. What results from this collaboration of inspiration, time, and technique is a delightfully balanced Colorado farmhouse beer representative of both breweries. 6.4%ABV

Grapefruit Hefeweizer

My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish. 6.6% ABV

Birds & Bees is our 6.2% ABV modern interpretation of a Bière de Miel (a saison-style ale brewed with honey), inspired by one of our favorite beers of this style, with an addition of wildflower honey to the kettle, and dry hopped with Motueka from New Zealand. This beer is light, refreshing, and dry while possessing bright notes of flowers and lime. Lively, effervescent carbonation elevates the aromatics out of your glass and into your nose! A gentle mouthfeel invites the next sip. 6.2%ABV

Belgian

Copper-tinted brown ale that combines generous hints of fruit, toast and sweet caramel. Abv: 7%

With its typical golden color, slightly hazy appearance and fine head, is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. It was first brewed by the monks of Chimay at Scourmont Abbey in 1966. Above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. 8% ABV

This is one of the oldest beers of Westmalle Abbey, with a tradition that dates back to the start of our brewery. It was created to drink with meals in the abbey, something the monks still do today. As a top fermented golden yellow Trappist beer, the Extra is unique in combining a low alcohol content (4.8%) with a rich flavour. Enjoy its fruity notes and its refreshing, thirst-quenching character. 4.8%ABV

Forget Shark Week. Beach Creature is here for the summer. Possibly the most frightening thing to ever lurk around the seas. Its reign of terror stretches from Mavericks Beach to Coney Island. No shore is safe! This take on a classic West Coast IPA was brewed on a 2-Row base with a touch of a few specialty malts to give it a nice but mild malty backbone. Copious amounts of Cascade and Chinook were added hot side in multiple additions which present tons of citrus rind and grapefruit, Clean. Dry. Appropriately bitter. 7.7% ABV.

We flipped the script on Hawiian Pizza. 6.8% nope 8.6% Heavy on Mosaic with a hint of Simcoe? No. Heavy on both! This juiced up version of HP was outrageously hopped with Simcoe, Simcoe Cryo, Mosaic, Mosaic Hyperboostm, and Kohia Nelson, which is a blend of New Zealand grown, Nelson Sauvin, Rakau, and Passion Fruit. Yes. Actual passion fruit. 8.6% ABV.

Smog Cutter is a new twist to a classic American IPA that we grew up loving. We double dry hopped this with Citra, Simcoe and Mosaic We then added added some new hop products (Mosaic Abstrax, Mosaic Quantum Simcoe Abstrax and Simcoe Quantum) to add updated innovation to the classic style. ABV: 7.8%

Double IPA made with 100% NY-grown ingredients. Two heavy-handed dry hop additions of NY Zeus, Mackinac and Paradigm hops saturate this pungent, hazy Double IPA. Dark

Released Nov. 2019. A Jedi prophecy foretells that the Chosen One from Florida will bring balance to beer by choking out punk ass gangsta rappers… but sometimes this path leads to the darkside. Fortunately, there is a thiicccc Life After Death Star. Featuring a long boil to create our thickest and most decadent base yet, we added shredded raw coconut, marshmallow, vanilla, and Ghost Bear Espresso Blend coffee from the newly crowned Microroaster of the year, Mostra Coffee, along with a touch of lactose. 11%ABV Life After Death Star pours a viscous jet black and develops a caramel head upon pouring releasing an olfactory onslaught of beautifully balanced notes of espresso coffee paired with flavors of big fudgy creamy marshmallow, just scrapped vanilla, brownie batter, and light coconut throughout. This beer is extremely smooth, luxurious, and creamy. You may actually try and chew it. No question this is the biggest and best stout to come out of Middletown yet.

Maduro is a Northern English-style brown ale with some American affectations. Maduro is higher in alcohol than the common English brown ale and features flaked oats in the malt bill which imparts a silky body and works to mesh the roasted, toasted and chocolate components together in Maduro’s complex malt profile. The end result is a remarkably full-flavored yet approachable and sessionable brown ale that pairs well with mild to medium cigars. 5.5%ABV

The Classic! Bourbon Barrell aged Imperial Stout. 12%ABV

An unfiltered rice beer, Makku is a modern take on Korea’s oldest alcoholic beverage, Makgeolli. For the first time drinker, Makku is an unanticipated and new experience. A few years ago we went to Tampa, Florida to brew a massive Imperial Stout together with our friends at Angry Chair Brewing. 2022 it was time again, but this time it was brewed in Sweden, here is the barrel aged version. 14.3% ABV

Oatmeal stout 6% abv

Tiny is a Belgian inspired Imperial Stout weighing in at 11.8% abv. You'll find big chocolate and roasted notes, balanced with the Belgian flavors from the Abbey yeast strain. This beer is very smooth and lacks the astringency you sometimes find in these big Imperial Stouts. 11.8% abv

Gingerbread Stout Aged in a Combination of A. Smith Bowman and Heaven Hill Bourbon Barrels. 12.2% ABV.

Porter

La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. Sa mousse, beige foncé, est fine et persistante. Les Brettanomyces sont bien présentes au nez, lui conférant un caractère vineux avec des cerises bien mûres comme un vieux kirsh, et un peu de cuir. Une touche torréfiée et légèrement fumée complètent le tableau. Ces arômes se retrouvent en bouche, additionnés de notes de moka, de poudre de cacao et de pruneaux.

Blonde Ale

Brewed with the Fooled You Pepper” that’s been bred to remove the capsaicin (the spice!), this refreshing blonde ale offers all the aroma and flavor of a freshly cut jalapeno, without the heat! Add it back with a jalapeno slice or mix things up with a Bloody Mary mix! ABV: 5.2%

"San," or "Three," is the third beer in our series inspired by Japanese-Brazilian culture. This Blonde Ale features guava and jasmine, a fragrant flower widely cherished in Japanese tea culture. Jasmine imparts delicate floral and slightly sweet notes, perfectly balancing the guava’s sweetness. A refreshing fusion that honors Japanese heritage in Brazil. ABV: 5.0%

Rauchbier

In the world of German brewing, Krausen refers to the intense proliferation of bubbles and foam formed during fermentation of a young or “green” beer. And Aufkrausen (literally to kräusen it up), refers to a historic brewing technique in which some green beer is added to a fully-matured lager. This is a very old and very typically German tradition, and today even English-speaking brewers refer to this technique as krausening. Krausening brings the vibrant freshness of young beer to the more refined, austere flavors of a fully-matured lager. Aecht Schlenkerla Krausen is an amber-colored, unfiltered lager beer with beautiful malt flavors and a slight smokiness. It matures for months in the deep rock cellars underneath the Schlenkerla brewery and is krausened with Aecht Schlenkerla Rauchbier just before kegging. Quaffable and with a pleasantly moderate level of alcohol, Aecht Schlenkerla Kräusen is an ideal refreshment for the warmer months.
