Thirteen Water West Introduce
In the heart of New York City, a city renowned for its world-class dining, finding a sushi experience that is both exceptional and a great value can feel like a rare discovery. Thirteen Water West, a sister location to the highly-regarded Thirteen Water East, offers exactly that. As part of the Ume Hospitality Group, which also operates other celebrated omakase spots, this restaurant brings a unique and sophisticated approach to the art of sushi. It's not just a meal; it’s an immersive dining experience centered around the concept of "layered" sushi, where fresh, raw, and cooked ingredients are combined to create a symphony of flavors and textures in each delicate piece. This modern and innovative take on omakase is what makes Thirteen Water West a destination for special occasions and a must-try for any sushi aficionado.
The atmosphere at Thirteen Water West is designed to be both cozy and trendy, creating an intimate setting that is perfect for a memorable dinner. The experience is typically an omakase-only tasting menu, where you surrender your choices to a skilled sushi chef who curates a perfect sequence of dishes for you. This trust in the chef's expertise allows for a truly unique culinary journey, with each piece of sushi presented as a work of art. The quality of the ingredients is paramount, with a focus on fresh, high-quality fish that is meticulously prepared. The experience is often praised not only for the food but also for the personalized service, making it feel like a truly special event.

What is truly worth choosing at Thirteen Water West is the extraordinary omakase experience itself. It's a journey that is celebrated by both seasoned foodies and those trying omakase for the first time. The value for the price is consistently highlighted in reviews, with many noting that the experience rivals places that cost significantly more. The focus on unique flavor combinations is a major draw, and while some may sound unexpected, like the Salmon Tomato, customers report that the pieces are "chosen effectively" and are exceptionally well-balanced. The tuna pieces, particularly the ones with caviar or truffle, are a fan favorite, praised for how well the flavors balance the fish.
Beyond the main courses, the a la carte "Others" menu offers enticing options to supplement the omakase, such as the Hokkaido Uni and the A5 Wagyu. The drink menu, featuring a great selection of sake and Japanese beers, is also a significant draw. The service is a key part of the experience, with the staff and chefs being highly attentive and knowledgeable. As one customer puts it, a sushi chef like Sean is a "master at his craft," whose level of "technique and attention to detail" is simply impressive. The combination of exceptional food, a personal and attentive service style, and a great price point makes Thirteen Water West a place you'll want to revisit, as one reviewer put it, you "won’t go back to any regular sushi restaurant after this."

★ 5★ 4★ 3★ 2★ 1Thirteen Water West is the sister location to Thirteen Water East, located in the Chelsea/Midtown area of NYC. Part of the same Hospitality group that owns other Omakase spots such as Ume or Shinn East, it brings another experience for special occasions. The staff are quite friendly and attentive, as our water was refilled before it even got half way empty. The staff interacted minimally, though did ask us what our favorite ones were and also helped initiate any extra pieces. They also provided us with a free matcha ice cream, as it was our anniversary when we went which was nice of them to do so.The Sushi was of great quality, though a bit smaller than we were expecting. It felt very delicate and easy to fall apart, especially when some pieces had many different layers to it. Some combinations sounded off at first to us, like the Salmon tomato, but the pieces were chosen effectively and we couldn't even taste the tomato with the salmon. Our favorites were the tuna ones, as the caviar or the truffle balanced the fish quite well. We also got a snow crab uni as an extra piece, though it was good, but wasn't outstanding to us.For $75/person, it is a great value for omakase and the experience.
August 07 · Nick SWhat an amazing experience. Not only was the food phenomenal and amazing, but the service was personal, perfect, and attentive. I’ve never had sushi so fresh, so flavorful, with such great attention to flavor pairings. My favorite of the omakase experience was definitely the hamachi with the roasted shishito pepper.I don’t think I could go back to any regular sushi restaurant after this. Sean, our sushi chef, was truly a master at his craft. I was so impressed with the level of technique and attention to detail each piece of sushi received. You would think he was someone who has done this his whole lifetime with the level of expertise he showed!Absolutely loved this spot, great price, great quality of food, and left very full. Definitely going to try coming again before my weekend trip is over.
April 04 · Carmen TunI had an incredible experience at Thirteen Water West Omakase -- special thanks to chef Edison and chef Sean! This is one of my favorite omakase places -- the pieces are actually a really good portion/on the larger size and the toppings on top of each are so unique (toasted seaweed, ginger flakes, truffle, toasted tomato, etc;). I personally loved the salmon tomato piece -- it was so juicy and the flavors are exquisite! The chefs also made the whole evening so fun — they are super friendly, patient with photos, and great to chat with! Top-tier hospitality and food! Highly recommend -- been there twice already, and will definitely be going back again :) thanks again!
April 13 · Jessica PengEdison gave us the best omakase experience ever for my birthday! From start to finish, he took such great care of us and made the night feel incredibly special. The quality of the sushi at Thirteen Water West is outstanding—everything was fresh, beautifully presented, and absolutely delicious. Every course was a delight, and you could really tell how much thought and craftsmanship went into each piece. We will definitely be coming back. Highly recommend for anyone looking for a memorable omakase experience!
March 20 · KyssaI had a wonderful time at Thirteen Water.Chef Edison really makes you feel at home, and he’s so personable. The pacing of the food is fantastic and it allows you to savor each nigiri that comes your way.The staff was always on top of it and refilled my water every time it was low without me ever asking for it.All in all, for the price point, it’s hard to beat and I would highly recommend it.
