It felt like a blend of flavor and magic.Even to this day, Chef’s Table remains one of the best Michelin-starred restaurants we’ve ever visited.

July 05 · Piotr MyszkorowskiStill THE Chef’s Table.Even after a high-profile split with Chef César Ramirez and the loss of its three Michelin stars, the experience still met, and in many ways exceeded, my expectations. This has been a bucket-list restaurant for me ever since I moved to the U.S., and I loved every single moment of it.Chef’s Table has been around for over a decade, but walking through a regular grocery store, past the butcher section and guys in shorts and pink flip-flops, still felt oddly magical. There was just something surreal about that contrast.After being greeted, we were seated at the center of the counter, with a panoramic view of the kitchen: from the canapé and grill stations to the vegetable and sauce prep areas. Despite the relatively new lineup (the current team has been in place for less than two years) the kitchen and front-of-house moved with incredible precision and synergy. Co-executive Chefs Max Natmessnig and Marco Prins were “leading” the kitchen, but you wouldn’t guess it from their presence. No ego, no detachment, just hands-on intensity and quiet discipline. They worked side-by-side with the younger cooks, right in the thick of it, with the same focus and urgency.Food-wise, Chef’s Table still leaned on its French-Japanese fusion roots from Cesar Ramirez’s era, but it seemed like the kitchen was evolving away from his signature touches, like the iconic uni toast. The level of genuineness and creative identity may not feel as singular as before, but what was served were still technically excellent. Thoughtfully composed dishes built around unconventional (or at least uncommon) ingredients, particularly by U.S. fine dining standards. The current interpretation of French-Japanese fusion tilted more toward the French side. The Japanese influence was mostly ingredient-driven—elements like Miyazaki Wagyu, Abalone, and Codium seaweed. Still, the execution was pristine, and a few dishes were mindblowingly good.
